Soak the soya chunks in enough hot water.
Add 1/4 tsp salt, cover with a lid and keep aside for 10 minutes.
After 10 minutes, the soya chunks are softened.
Drain out all the water just by lightly squeezing with the help of a spoon.
Now add ginger-garlic paste.
Add 1/2 tsp kashmiri red chilli powder.
Add 3 tsp cornflour.
Mix and coat all the soya chunk well.
Add a little bit of salt (as salt already added to the soya chunks at soaking time) and mix.
Heat oil in a pan and add the coated soya chunks.
Fry till turns golden in colour.
Remove them to tissue paper.
In the remaining oil add chopped ginger and garlic, saute for a minute.
Add chopped onion.
Add chopped spring onion and capsicum saute again for 2-3 minutes on medium flame.
Add 1/2 tsp salt.
Add kashmiri red chilli powder.
Add black pepper powder and mix.
Add vinegar.
Add green chilli sauce.
Add soya sauce.
Add tomato sauce and mix well.
Add 4 tbsp water to 1 tsp cornflour and make a lump-free solution.
Add this cornflour mixture to the pan and stir continuously on low flame.( my sauce is perfect but if needed, you can add sugar)
When the sauce is thickened, add the crisp fried soya chunks, coat the soya chunks nicely with the sauce for a minute and turn off the gas.
Add some chopped spring onion.
Serve hot immediately as a evening snack or in a meal along with noodles or fried rice.
